How to make delicious cauliflower rice
So far you must have eaten cauliflower curry with Roti/Naan/Chapatti/Pita bread. Firstly , let us not combine wheat with cauliflower. If your not so well-functioning digestive system does not accept cauliflower that well why combine it with another highly processed wheat/gluten. This combo can cause GI tract discomfort right away. Try this recipe and since we are going to eat it like we eat rice, it is very comforting on your stomach.

Instructions
  1. Buy the whole fresh cauliflower, not the packaged florets. it is cost-effective and healthier. Cut the cauliflower and pulsate it in your ninja or any food processor that you might have. Tip: Do not store the pulsated cauliflower in the fridge. It spoils too soon. Refrigerate the cut florets instead.
  2. Cauliflower is high in fiber and hence takes a while for your body to break down. Remember, 100 calories from cauliflower provides you with atleast 25% of your daily fiber intake.
  3. I love this recipe especially for dinner. You can eat it just as cauliflower rice or with eggs, chicken, organic tofu on the side. It aids in weight loss since this meal is perfect when you are wanting a low-carb high-fiber meal.
  4. As you can see in the image below, I have served it with tandoori chicken. It can be eaten with Avocado slices as well. It tastes good either way.
Recipe Notes
  • Saute the onions and cumin in avocado oil till the onions turn light brown
  • Add the pulsated cauliflower to the above
  • Add salt, turmeric, paprika and cilantro/coriander powder or garam masala
  • Stir for 2 min and serve.
